A few months ago Schoepf’s added on a new room in the back, and a new entry where you can now order your food inside rather than in the out-of-doors. I ordered brisket, ribs, and a pork chop. The brisket had the same roast-beefiness as it did on my last visit, but this time the slices had no crust, and therefore no real smoky flavor. The ribs had plenty of flavor from the heavy salt…

Liked the open pit full of meat to choose from. Lots of options and all had plenty of flavor and liked the vinegar based sauce.

Popped in for lunch and it was excellent as usual. Moist brisket with a pretty smoke ring and a yummy crust. I love sauce yeah, I know, I know) and Schoepf's does sauce the way I like it-- not too thick and not overpowering, but just perfect enough to pour over my beans and creamy cole slaw.

Disappointing visit today. Out of chicken, at 3:30 pm out of baby back rib BBQ sauce (which is the main reason my wife orders the baby back ribs). The baby back ribs were dry. Service was not friendly or thank us for our business.

Vert hit or miss on the brisket sausages don't offer up a lot of flavor have actually had some excellent brisket but its not been often

Rather cool atmosphere in Belton just off of I-35 with backyard concerts and all. You get to select your meats as they come right of the smoker. The meats were overall pretty decent. The brisket here is ok, but be sure to ask to get it fatty. Otherwise you may get dry, lean brisket. Honestly, I was a tad disappointed with their overall quality of the brisket. Ribs were just ok, nothing to really write home about. Their true secret at this stop is there sausage, especially the venison sausage. Excellent!!! For something a little outside of the normal BBQ box, their quail is delicious as well. BBQ sauce is a little thin, kinda vinegar based style.... But one should never judge a BBQ joint by sauce. :)

The Brisket was rather disappointing, no bark, no smoke ring and dry. The hot link was very tasty with a great spice to it, however not much snap. The Sirloin was excellent though. Very tender and cooked perfectly. I also tried some turkey which was not bad, although could have been ever so slightly more moist. The sauce was one of the best I have had. It is has a really nice spicy tang to it. I rounded off with a peach cobbler which was good. The peaches still a little firm had not been over cooked which is a huge plus in my book.

The moment we entered the smoke-filled patio and beheld the meats-a-plenty (brisket, chicken, pork ribs, pork chops, sausage, sirloin, turkey breast, and venison sausage), we knew we were in business. The pitman was patient as we made our exacting selections, then—plop, joy: the tenderest of briskets, the thickest of pork chops, the happiest of bellies.
