A few months ago Schoepf’s added on a new room in the back, and a new entry where you can now order your food inside rather than in the out-of-doors. I ordered brisket, ribs, and a pork chop. The brisket had the same roast-beefiness as it did on my last visit, but this time the slices had no crust, and therefore no real smoky flavor. The ribs had plenty of flavor from the heavy salt…

Schoepf's - Belton Not top 50, but I'd been to Millers so I figured I give it a try. Fantastic place. You enter in the pit room and order off the pit like at Coopers (most notably). The dining area and bar addition are new, but with an old school BBQ joint feel. Brisket - moist and tender, but held together. Great flavor with just a smidge too much salt. Jalapeño cheese sausage doesn't have too much jalapeño, just enough for great flavor. Pretty standard, but I liked it. Ribs were tough and dry, though full disclosure I got there at 2pm. Didn't have much flavor, either. Overall - I like this place. It's not super special, but solid. Brisket was good, ribs weren't as much. I say a solid B-.

Consistently awesome! Brisket is always tender and moist, though I'd rather they not cut off the tasty ends and edges. Sides are always delish... And the jalepeno sausage is awesome. Can never go wrong with Schoepf's.

Liked the open pit full of meat to choose from. Lots of options and all had plenty of flavor and liked the vinegar based sauce.

Popped in for lunch and it was excellent as usual. Moist brisket with a pretty smoke ring and a yummy crust. I love sauce yeah, I know, I know) and Schoepf's does sauce the way I like it-- not too thick and not overpowering, but just perfect enough to pour over my beans and creamy cole slaw.

Disappointing visit today. Out of chicken, at 3:30 pm out of baby back rib BBQ sauce (which is the main reason my wife orders the baby back ribs). The baby back ribs were dry. Service was not friendly or thank us for our business.

The sausage is the best meat they offer & the cheesy potatoes are amazing

Rather cool atmosphere in Belton just off of I-35 with backyard concerts and all. You get to select your meats as they come right of the smoker. The meats were overall pretty decent. The brisket here is ok, but be sure to ask to get it fatty. Otherwise you may get dry, lean brisket. Honestly, I was a tad disappointed with their overall quality of the brisket. Ribs were just ok, nothing to really write home about. Their true secret at this stop is there sausage, especially the venison sausage. Excellent!!! For something a little outside of the normal BBQ box, their quail is delicious as well. BBQ sauce is a little thin, kinda vinegar based style.... But one should never judge a BBQ joint by sauce. :)

The moment we entered the smoke-filled patio and beheld the meats-a-plenty (brisket, chicken, pork ribs, pork chops, sausage, sirloin, turkey breast, and venison sausage), we knew we were in business. The pitman was patient as we made our exacting selections, then—plop, joy: the tenderest of briskets, the thickest of pork chops, the happiest of bellies.
