If it’s been a long day of poor-quality smoked meat, then I start ordering dessert. If the meat is bad, then the sweet stuff is usually pretty good. I watched the knife man cut the brisket and it looked tough and springy, so I added a slice of chocolate cake to the order. Beans were unseasoned and the slaw was a wet mess. Brisket had a nice smokey flavor. Sausage had a nice crunch in the casing and good seasoning. Ribs could use more smoke flavor but nice and moist.

Had the gut pack with brisket ad german sausage would have been perfect if they had left the pickled onions and jalapeños off like I asked good place will try again

I stop in here on way back from NE TX to Austin. Great brisket. Just right amount of smoke and tenderness. You will almost always see Kirby in back slicing brisket. You know you are in a place that wants you to taste most flavorful cut when they charge more for lean cut than moist.

The mesquite-smoked brisket was well seasoned and tender, and the sliced German sausage was slightly sweet and spicy. But the real winners at this rustic locale, decorated with vintage posters for old cowboy flicks, were the sides. Green beans sprinkled with garlic, onion, and bacon and not-too-chunky potato salad with thinly sliced carrots were a perfect reward for a long day of driving. Opt for a square of cornbread instead of a slice of white bread.
