This place is coming along nicely. Brisket and beef ribs were spot on this week. When they're' on their beef game, they're up therewith some of the best(only a couple times they've been off). They're really settling into the restaraunt business and it's showing through their Q. Only joint in Abilene to get smoked meats.

Quite possibly the best Q in West Texas. Got the 2 meat plate of fatty brisket and sausage and added two pork ribs (which were huge). Brisket was nice and tender and the fat perfectly rendered. Great taste and consistency. Sausage was good not great. Pork ribs were fantastic; tender meat with great peppery taste. Sides were great beans (without any bacon - a first in Texas !!!) and brisket Mac N Cheese (very tasty). Overall great Q and with few tweaks could be among elite in Texas.

With a history formed by ranching and railroads, Abilene sounds like a city destined to have good brisket. It was founded in 1883 after cattle ranchers and land speculators convinced the railroad to swing north of former county seat Buffalo Gap, and a new city was born. After the railroad came through, cattle no longer needed to make the long trek up the Great Western Trail to Kansas. Still, good brisket is hard to find here….
