Cold rainy January day. Great way to get brisket. Got there at 10:am doors opened at 11:am and eating the best brisket on the planet at 12:00 great way to start the day.

If it’s been a long day of poor-quality smoked meat, then I start ordering dessert. If the meat is bad, then the sweet stuff is usually pretty good. I watched the knife man cut the brisket and it looked tough and springy, so I added a slice of chocolate cake to the order. Beans were unseasoned and the slaw was a wet mess. The mesquite-smoked brisket was well seasoned and tender, and the sliced German sausage was slightly sweet and spicy. But the real winners at this rustic locale, decorated with vintage posters for old cowboy flicks, were the sides.
