I got half a pound of moist brisket. Try gave me burnt ends at no charge. Delicious as always. I'm. Considering putting the paper wrapping under the drivers seat in my car to use as car freshener.

Got here at 11 and 2 families eating. When we left it was quickly filling up. The moist brisket was great with nice flavorful bark and good flavor. The ribs were moist and tasteful and a 4.8! A customer told us to get the jalapeño & cheddar sausage. It was spicy and juicy but didn't have a greasy taste. The young slicer gave us a sample of the turkey and I didn't know turkey could be smoked so good. It was moist and tender and peppery. Mrs. Hernandez gave us a tour of the pits and backyard. I wish we could have stayed until evening. They have live music and outdoor bar. Horseshoes, washers and large outdoor seating area. Overall, this is an excellent place with friendly staff and owners that are only out shined by the BBQ!

Brisket and Sausage were excellent. Pull Pork was pre sauced and just can't stand any meat just sitting in sauce. Would have gotten a 4 or 5 for the Brisket but for Heavens sake clean the restrooms!!!! My 10 year old son said it was just nasty!!!!!!!!

Got here late on Labor Day so they were out of brisket but the turkey was outstanding and the sausages divine. Pork ribs were very good but not special. Service was engaging and friendly, even after a long busy holiday.

Longtime San Marcosans may recall this place as the former home of Woody’s, a barbecue joint that opened in 1984. It was taken over in 2007 by the Hernandez family, and in 2011 they changed the name to Hays Co. Bar-B-Que and Catering. You won’t find it if you’re not looking for it. Hidden at a blind curve a good ways outside of town, and definitely not in view of the Interstate, Hays Co. Bar-B-Que has been flying under the radar. It didn’t help that they’ve already changed names since opening after receiving the dreaded cease and desist for their previous moniker.
